Scouse and Crumble.

A pan of Blind Scouse. I made this once before and it's lovely! I've seen other recipes online adding veggie mince and spinach - may try that next time.

Feasting on Fruit featured a gorgeous fruit crumble with tahini oat topping. I made it today with peaches, strawberries and blueberries. To be honest I think the tahini made the topping taste kind of bitter. Next time I'll use more sweetner to disguise that.

Memorial Day feast.

I was too lazy to fire up my charcoal grill outside so I popped my cast iron grill on the stove and grilled some Tofurky sausages, Smart Dogs, zucchini, red peppers and red onion. I made the picnic potato salad from Healthy Happy Vegan cookbook and heated a can of Busch vegetarian baked beans. And to yop it all off: a tall glass of beer and tomato juice.

Lunch for baby.

Baby ate all of his lunch today. I made sweet potato falafel and couscous with vegan bechamel and veggies. For dessert his fave fruit, mangos.

Soup & Sandwich

I decided to make a simple veggie soup with macaroni today for me and the baby. It wasn't his favorite meal (spaghetti) but he ate a small bowl. 


Also made a chickpea salad sandwich that we both ate. Mine on toast, his on white with the crusts off. 

Dessert for me. Yummy!

Victoria Sponge.

Simple Victoria sponge using Kittee's vanilla cake recipe which I cut in half. I wanted thinner cake layers. I skimped on the jam. I didn't want to use up all of my husband's artisan jam! Recipe here: http://pakupaku.info/sweets/vanilla_cake.shtml

Veggie lasagna.

I totally forgot to photograph the beautiful pan of veggie lasagna I made! But here are pics of what's left. My 15 month old had two big bowls today.





The filling is a tofu ricotta with onion, red peppers, zucchini, mushrooms and spinach. Can't wait to eat more tomorrow. It was so delicious!

Double Protein Bowl

Double protein bowl. Baked tofu, smoky chickpeas, ginger kale mix, rice, beet sauerkraut and peanut sauce. Got this idea from The Happy Pear. I sautéed the kale with garlic and ginger and the chickpeas with garlic and smoked paprika. Very good lunch!

Mine has onion, sweet potato, zucchini and kale. 

I had a taste and it's so good. Would go very well with rice or couscous. Me and baby are eating this again for lunch.
