Quick Chilaquiles Casserole!

Fastest recipe to prepare when you've got a baby waiting for you. Simmered a quick sauce of sautéed onions, peppers, garlic, tomatoes and spices. Then I layered tortilla chips, black beans and corn from a can, the tomato sauce, vegan mayo and a bit of cheese and threw it in the oven for 45 minutes.  It was yummy!

Gosh, he's beautiful. How does it feel to creep into the nursery every morning (because you never know if they're awake or not) and see that little face looking up at you? :)

My kids loves the sauce so much from the recipe you posted years ago that we use it for enchiladas now, too :p
